Collard Greens with Bacon
this is good as a main course over rice
One pound or so of bacon
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon pepper
3 cups chicken broth
A dash or so of tabasco
3 or 4 big bunches of fresh collard greens, cut into 2-inch pieces
Directions
Cook bacon over low heat until crisp. Remove bacon from pan. Add onion to bacon fat and cook until soft. Add garlic, and cook until just fragrant. Add collard greens and fry until they start to wilt.
Pour in chicken broth, and season with salt, pepper, and a little tabasco. Reduce heat to low, cover, and simmer for 45 minutes, or until greens are tender.
